today's dinner

Yes, I ate a rice cake with almond butter for dinner.  It's MY dinner, right?

I'm on a rice cake kick now. They're low in calories, not too high in carbs, and you can put just about anything on them.

This time I went for Trader Joe's almond butter (I love Trader Joe's) and some cinnamon.  I occasionally make a protein shake with almond butter and cinnamon, so I figured it would be just as good on a rice cake.  And it is!  The only issue is that almond butter can be a bit runny sometimes. It wanted to run right off the rice cake so I had to eat it fast.

Any suggestions for toppings?  I already got a few from my last post, but I'd love to have more.

  1. I have an enormous multitude. :) Here are just a few, all of which have cream cheese as the base and all of whom involve salt and pepper. :)

    - Avocado and thinly sliced chicken breast.
    - smashed avocado and tomato with or without thinly sliced chicken breast
    - the above but substitute lovely fresh cooked shrimp or scampi for chicken breast
    - the above but substitute ham
    - cranberry and turkey
    - just avocado
    - just tomato
    - Cucumber - kind of like a cucumber sandwich without the bread
    - strawberries and baby spinach - with a drizzle of balsamic if you like
    - pickled onion and ham
    - tuna and pickled onion

    For me the following ones would be minus the cream cheese, salt and pepper optional -
    - Hommus
    - Nutella
    - very strong and excellent cheddar cheese
    - mustard relish or chutney with ham
    - curried egg and lettuce or watercress

    I've gone through a carton of eggs this week and now I'm out, so I'll have to switch it up myself..

    1. Wow! Thanks for all the suggestions! You have so many interesting combinations here, ones I would never think of. I think the turkey and cranberry sounds the best to me.

  2. I just tried strawberries on cream cheese.. OMG it was stunningly awesome. ;)

    Turkey and Cranberry is always one of my faves, I like it as a toasted sandwich too.

  3. Strawberries are nearing the end of the season here so I don't know if I'll find any worth buying. But I'll keep it in mind!
